Italian Sausage and Orzo Soup

Gather the Ingredients
Italian Sausage- it’s important to use Italian sausage as it already has a lot of seasonings and flavor in it and provides majority of the flavor to the soup.
Crushed Tomatoes
Diced Tomatoes-I used regular plain diced tomatoes, not the seasoned ones.
Chicken Broth- I love to use bone broth in soups because not only are they better for you and have more nutrients, but they also have more flavor.
Onion
Garlic
Celery
Seasonings- Italian seasoning, salt and pepper.
Orzo Pasta- you can use gluten free or regular. For gluten free, I have used both Banza Rice as well as DeLallo Gluten Free Orzo.
Heavy Cream- dairy free or regular. For dairy free, I love using Trader Joe’s or Silk.
Spinach- Fresh is best!
How to make Sausage and Orzo Soup
Sautรฉe the onion, celery and garlic. Brown the sausage and add the seasoning, tomatoes and broth.
Once boiling add the orzo and cook until tender. Then add the cream and spinach.
Serve and top with Parmesan cheese if desired.

- Taste first. Make sure to taste the soup before you add the salt and pepper. The sausage has a lot of flavor and seasoning and you don’t want the soup to be over salted if you add salt before tasting.
- To make gluten free: Use gluten free orzo to make this soup gluten free. My favorite is DeLallo Gluten Free Orzo or Iโve used Banza rice which is very similar to orzo but with extra protein from chickpeas.
- To make dairy free: Substitute dairy free heavy cream and dairy free Parmesan cheese for a dairy free version! My favorite dairy free heavy cream is Trader Joeโs or Silkโs Dairy Free Heavy Whipping Cream.

Italian Sausage and Orzo Soup
This one pot Italian Sausage and Orzo Soup is made with simple ingredients and is ready in just 30 minutes. Made with flavorful Italian sausage and orzo in a creamy tomato base, this cozy soup recipe is perfect for any weeknight.
Ingredients
- 2 ribs celery, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 lb Italian sausage
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 28 oz crushed tomatoes
- 14 oz diced tomatoes, with juices
- 1 cup heavy cream, dairy free if needed
- 1 cup orzo pasta, can sub 16 oz fresh cheese tortellini
- 16 oz (2 packed cups) fresh spinach
- Salt and pepper to taste
Instructions
- Heat a Dutch oven or large pot over medium heat. Add the butter and let melt.
- Add the onion and celery to the pot and sautée until the onions are translucent and the celery is tender, about 5 minutes. Add the garlic and sautée for 30 seconds.
- Add the Italian sausage to the pot and cook until browned, breaking up the meat and stirring often, about 5 minutes.
- Add in the Italian seasoning and stir.
- Deglaze the pot by adding a few tablespoons of broth. Scrape the bottom of the pot with your spoon to get all the brown bits off. Add the rest of the broth along with the crushed tomatoes and diced tomatoes.
- Bring to a boil and add the heavy cream and uncooked orzo. Stir right away so the orzo doesn’t stick to the bottom. Cook the orzo according to the package directions, making sure to stir often so it doesn’t stick to the bottom and burn.
- Stir in the spinach until wilted.
- Taste and add any additional salt or pepper if needed.
- Serve and top with Parmesan cheese if desired. Enjoy!
